Advanced Nut Pasteurization Solutions

Because nuts are widely used raw or dry roasted, food safety has become a major issue.  Nuts are processed in an agricultural environment where cross contamination of pathogenic micro-organisms such as Salmonella is inevitable which put consumers at risk.  Pasteurization is necessary to prevent nationwide outbreaks and product recalls.

After outbreaks of foodborne illnesses associated with raw almonds, the USDA (based on recommendations from the ABC) issued a mandatory pasteurization requirement of all almonds consumed in the USA.  This legislation came in effect on September 1, 2007 and affects the complete almond harvest for US and Canadian markets.  To improve the safety of almond consumption, almonds need to be treated with a process realizing at least a 4Log reduction.

Log5 provides solutions to nut processors based on compliance with the USDA’s regulations for pasteurization.  The log5 process is so gentle that it will preserve those important qualities such as flavor, nutrition and appearance while making it completely safe for consumption.

Challenges for pasteurization of nuts

Because tree nuts and peanuts are very fragile they are susceptible to quality degradation such as, cooked flavor notes, discoloration and loss of skin during harsh usually steam based pasteurization conditions.  To preserve to original quality of the product, the Log5 nut pasteurization techniques was developed.
