Nuts and seeds are processed in an agricultural environment where infestations are inevitable and cross contamination of pathogenic microorganisms such as Salmonella can put consumers at risk.  Pasteurization is necessary (and in certain cases mandatory) to protect the consumer and prevent (nationwide) outbreaks and product recalls.  Because nuts and seeds are widely used raw or dry roasted it is important that a defined and validated pasteurization step is incorporated in a production line.

After outbreaks of foodborne illnesses associated with the consumption of almonds the USDA issued a mandatory pasteurization requirement for all almonds consumed in the USA.  This legislation became law on September 1, 2007.  To protect the American consumer, all almonds need to be treated with a validated process realizing a minimum 4Log reduction.

Log5 supplies turnkey (non chemical, organic) pasteurization solutions for any nut or seed.  The Log5 systems comply with the strictest USDA and FDA requirements while maintaining important qualities such as flavor, nutrition and appearance.

Challenges for pasteurization of nuts and seeds

Tree nuts, peanuts and seeds are susceptible to quality degradation such as cooked flavor notes, discoloration and loss of skin during conventional steam based pasteurization processes.  The innovative Log5 technology is developed to preserve the original quality of the product while ensuring a 5Log reduction.

Versatility of the Log5 pasteurization system

The Log 5 system is easy to clean, very versatile and able to pasteurize all kinds of nuts and seeds such as almonds, hazelnuts, walnuts, pistachios, peanuts, pecans, brazil nuts, macadamias, cashews, but also sunflower seeds, chia seeds, etc.

As an integral member of the Royal Duyvis Wiener Group, Log5 has the capacity to design, engineer and manufacture all the equipment in-house.  Log5 supplies turnkey pasteurization systems but will also integrate a pasteurization system into an existing roasting, packaging or other production line.
